South Beach Diet Phase One Recipes Round-up for May 2014 (and an announcement)

Kalyn's Phase One Recipe Picks for May 2014 were Baked White Fish with Onions, Peppers, Olives, and Feta, Stir-Fried Broccolini with Oyster Sauce, Fried Cauliflower Rice with Shrimp, Sugar Snap Peas, and Red Pepper, Shrimp and Black Bean Salad with Cilantro, Cumin, and Lime, and Baked Eggs and Asparagus with Parmesan.

It's summer, and if I needed a reminder I got a good one when I looked at the bookmarks where I save recipe links to feature here every month and realized I didn't have one single soup, stew, or chili recipe this time.  I like a good bowl of soup as well as the next person, but I couldn't be happier to say bring on the salads! But before we get to the food, I want to talk a little about these round-ups.

This post makes 74 months of writing monthly South Beach Diet Phase One Recipes Round-Ups for the blog, and times have changed.  I still love the South Beach Diet, but now a lot of people reading my blog follow other types of low-carb or grain-free eating plans.  (That was the reason I gave the blog a makeover last year, adding new tabs so recipes could be sorted by diet type.)  After asking for opinions on Facebook and giving it a lot of thought, I've decided to make the monthly round-ups more broadly focused, hopefully making them more useful for people who aren't strictly following South Beach. I'll still include recipes that are South Beach Diet Phase One of course, but I also want to spotlight interesting recipes that are Low-Carb in general, Paleo, Whole 30, and possibly others. As always, all the recipes in the round-up will be grain-free, making them Gluten-Free as well, and there will be some type of labeling system to make it easy to see which recipes are Phase One or another plan. That new format will be coming next month; hope you like it. And if you have any thoughts about this, please share them in the comments!

South Beach Diet Phase One Recipes Round-Up for April 2014 (Low-Glycemic Recipes)

Kalyn's Favorite Phase One Low-Glycemic Recipes for April 2014 were Mediterranean Spaghetti Squash, Roasted Cauliflower Salad, Spinach and Kale Salad with Greek Flavors, Roasted Turnips with Balsamic Vinegar, and Slow Cooker Frittata with Broccoli, Ham, and Swiss.

It's May?  Seriously, I can hardly believe it but that doesn't mean I'm not happy to see the warmer weather arrive.  The only thing dampening the mood at Chez Kalyn is that I'm having serious garden veggie withdrawals at the idea of going another summer without a real vegetable garden.  last year I tried growing tomatoes and herbs on the deck, an experiment that had pretty mixed results.  In the end I realized my deck just doesn't get enough sun to really grow things well, and since my new house has the triple whammy of wind, a short growing season, and lots of critters to eat the crops, I'm planning to build a greenhouse for next summer.  There's even a perfect spot for it right outside the side door of my garage.  Meanwhile, it's farmer's market veggies and begging from friends for me for another year.  

Of course the arrival of a new month means it's time for another monthly round-up of South Beach Diet Phase One Low Glycemic Recipes I've posted on Kalyn's Kitchen or spotted on other blogs during the month.   There are some great finds from April, and I'm experimenting with a few more pictures, so let me know if you like that idea.

South Beach Diet Phase One Recipes Round-Up for March 2014 (Low-Glycemic Recipes)

Kalyn's favorite Phase One Recipes from March 2014 were Pressure Cooker Mexican Beans with Avocado-Poblano Salsa, Cauliflower with Garlic and Lemon, Cheesy Baked Cauliflower Tots, Ground Turkey Low-Carb Enchilada Casserole with Red and Green Chiles, and Sriracha Beef Cabbage Bowl.

I really did enjoy my years teaching elementary school, but on April Fool's Day I'm glad I'm not at school with a whole room full of fourth graders trying to trick me.  Other than that, I love the first day of April, because when it's April there's no denying that it's spring!  That's true even if the Utah weather is dumping snow on us like it did over the weekend; it won't be long before we're growing veggies and herbs and enjoying the sun.  This time of year can be challenging in the eating department though; some days are still pure comfort food, but other days a simple salad seems like it would be plenty.  Luckily there's something for everyone in this month's South Beach Diet Phase One Low-Glycemic Recipes Round-Up; hope you will find something fun to try.

Kalyn's favorite Phase One Recipes from February 2014 were Baked Eggs in Canadian Bacon Cups, Roasted Cabbage with Lime and Sriracha, Baked Chicken Strips with Mustard, Almond, and Parmesan, and Easy Taco Soup.

It's March, and personally I couldn't be happier about it.  Not that I should be complaining because at my house it only snowed a couple of times in February, and the last few days we've been having temperatures in the 60s!  Everyone in Utah doesn't know whether to celebrate or worry, because usually when it gets warm early like this, we end up getting dumped on with snow in late April or early May, when everyone has their garden planted and we really want it to be warm.  So for now we're kind of holding our breath and sending condolences to people on the east coast who seem to be getting all the snow.  Of course the new month means it's time for me to round up all the South Beach Diet Phase One Recipes I posted or spotted on other blogs during the past month and add it to our archives of Phase One Round-ups.  And once again there are a lot of good ones, enjoy!

Roasted Cabbage with Lime and Sriracha
My love affair with cabbage continues with this Roasted Cabbage with Lime and Sriracha!

I've been a cabbage fan for a long time, but I think the beginnings of my love affair with cabbage probably were stirred by a bacon and cabbage salad my mom used to make.  I'd clean my plate when we had that for dinner, and not just because of the bacon either!  As an adult I've continued to love cabbage both raw and cooked, not only for the flavor but also because it's such an inexpensive, nutritious, and diet-friendly ingredient.   I've posted a lot of favorite recipes featuring cabbage through the years, and this Roasted Cabbage with Lime and Sriracha is definitely a riff on my Roasted Cabbage with Lemon, a recipe that's been hugely popular on the blog.  If you like lime and Sriracha Sauce, take a chance on the cabbage and I bet you'll like this one as much as I did!

South Beach Diet Phase One Low-Glycemic Recipes Round-up for January 2014

Kalyn's favorite Phase One Recipes from January 2014 were Low-Carb No-Egg Breakfast Bake with Turkey Breakfast Sausage and Cheese, Green Chile and Chicken Mock Enchilada Casserole, Turkey Picadillo Lettuce Wraps, and Vegan Spaghetti Squash and Black Bean Mexican Bowl.

It's Superbowl Sunday, undoubtedly one of the most indulgent food holidays of the entire year.  I realize most people are probably looking for Superbowl Recipes and here I am sharing my once-a-month round-up of South Beach Diet Phase One Recipes.  And although there are certainly some recipes here that would make fine Superbowl-watching food, the real reason the round-up is coming today is that after I finished posting Daily Phase One Recipes for the whole month of January (whew!) I just had to have a little break, even if it meant that the Phase One Round-up didn't come out on the first day of the month like it usually does.  Yesterday I puttered around the house, went to a movie with a friend and mostly forgot about my blogs for the day.  But the Superbowl only lasts one day and this round-up has some deliciously healthy recipes that I know you'll want to make over and over again, so I hope you'll take a look and pick something to try even if I'm a day late sharing it!

South Beach Diet Phase One Low-Glycemic Recipes Round-Up for December 2013, and Happy New Year Everyone!

Kalyn's Favorite Phase One Recipes from December 2013 were Turkey and White Bean Chili with Chocolate, Slow Cooker Southwestern Beef Stew with Tomatoes, Olives, and Chiles, Slow Cooker Frittata with Broccoli, Swiss, Cottage Cheese, and Parmesan, and Easy Shrimp Cocktail with Creamy Sriracha Cocktail Sauce.

I start every month by posting a round-up of the South Beach Diet Phase One Low-Glycemic Recipes from Kalyn's Kitchen and other blogs for the previous month, but there's something special about that post when it falls on the first day of a brand new year.  I love the way the new year is full of possibilities, and for many of us that means a chance to begin or resume a healthier way of eating.  My goal with these round-ups is to prove there's plenty of knock-your-socks-off delicious food to enjoy, even when you're limiting carbs or trying to choose low-glycemic foods.  And I can tell from my blog stats that a lot of people have already started on a healthier eating path, so I hope these recipe suggestions are useful for you.  Happy New Year everyone; I hope 2014 will be a delicious and healthy year for you.

South Beach Diet Phase One Recipes Round-Up for November 2013 (Low-Glycemic Recipes)

Kalyn's favorite Phase One Recipes for November 2013 were Green Beans with Tahini-Lemon Sauce, Easy Brussels Sprouts Gratin, Rich Salad with Hearts of Palm, and Roasted Brussels Sprouts with Avocado and Pecans.

Back in 2008 when I had the brainstorm to post a monthly round-up of all the South Beach Diet Phase One Low-Glycemic Recipes I spotted around the web or featured on Kalyn's Kitchen during that month, I was definitely not thinking about months like November!  When nearly every food blog is posting recipes for Thanksgiving foods, you're just not going to find as many Phase One Recipes as usual.  But even if this months round-up is a bit smaller than some, with a definite emphasis on side dishes, I promise there are some deliciously-healthy recipes here for anyone who's doing Phase One or looking for lower-carb eating options.  And it's December 1, so Thanksgiving weekend is officially over and it's time to get back on track!

South Beach Diet Phase One Recipes Round-Up for October 2013 (Low-Glycemic Recipes)

Kalyn's favorite Phase One Recipes for October 2013 were Greek Salad Spaghetti Squash BowlSlow Cooker Chickpea Stew, Chicken Paprikash, and Turkey and Black Bean Mexican Cabbage Bowl.

It's time for the monthly Round-Up of South Beach Diet Phase One Recipes that I've posted during the previous month or spotted on other food blogs.  You can tell it's Fall by scrolling through these recipes; I spotted lots more soups and not many salads, and cauliflower seems to be Veggie of the Month for October.  I doubt many people start a diet in November, so I hope it doesn't seem cruel to draw attention to Phase One when everyone's thinking about Thanksgiving Recipes.  But in January when you're looking for food that's a bit lighter and lower in carbs, you might enjoy looking back through my Low-Glycemic Recipe Round-Ups like this one! (And for those who try to stick to a low-glycemic eating plan even during the holidays, more power to you!  I do my best, but it's hard this time of year.)

Kalyn's favorite Phase One Recipes for September 2013 were Three Cheese Zucchini Frittata, Baby Kale Paleo Taco Salad, Sriracha Beef Cabbage Bowl, and Roasted Balsamic Zucchini and Mushrooms.



Another month has gone screaming by, and it's time for me to share the links I've collected all month for this round-up of low-glycemic recipes. (All the recipes here are suitable or easily adapted for the South Beach Diet Phase One, and many are also Low Carb, Gluten Free or Paleo.)  And I probably say this every month, but what a great-looking collection of healthy recipe ideas!  

It's been a busy month behind the scenes at Kalyn's Kitchen.  If you follow me on Facebook, you know I'm in the middle of having the blog re-designed.  I'm aiming for a new site that will feel very similar (with most functional elements located exactly where they are now) but the new look will also have expanded features (including a second row of tabs with categories to make it easier to find certain types of recipes.)  I'm getting excited, and it won't be long now, so keep an eye out for the new look!

South Beach Diet Phase One Recipes Round-Up for August 2013 (Low-Glycemic Recipes)

Kalyn's Favorite Phase One Recipes for August 2013 were Grilled Zucchini Caprese Stacks; Green Bean, Tomato, and Feta Salad; Summer Tomato Salad with Goat Cheese; and Slow Cooker Frittata with Kale.

South Beach Diet Phase One Recipes Round-Up for July 2013 (Low-Glycemic Recipes)

Kalyn's favorite Phase One Recipes from July 2013 were Grilled Halloumi Cheese Skewers, Egg-Crust Vegetarian Breakfast Pizza, Middle Eastern Tomato Salad, and Grilled Chicken and Veggie Kabobs with Garlic and Basil.

Even though I no longer head back to school every August, I still have a slight feeling of panic when that calendar page turns over.  All too soon grilling on the deck, tomato sandwiches, and fresh herbs from the garden will be gone for another year.  I kept wishing summer would last longer all the while I was typing up this South Beach Diet Phase One Recipes Round-Up, because things I found this month were so seasonal, so summery, and just so darn delicious looking (and the thought of diet food never entered my mind.)  I'd have a hard time choosing just which one of these recipes I'd like to try first, but if you have time for a comment, I'd love to hear which one really catches your attention.  (You can use the label Low-Glycemic Recipe Round-Ups to see all the posts like this one.)

South Beach Diet Phase One Recipes Round-Up for June 2013 (Low-Glycemic Recipes)

Kalyn's favorite Phase One Recipes for June 2013 were Spicy Chopped Greek-Style Salad, Grilled Halibut with Basil Vinaigrette, Grilled Chicken with Lemon, Capers, and Oregano, and Vietnamese Cabbage Salad.

It's July! In Utah this is a double-holiday month because we have Pioneer Day along with the 4th of July, so people here get two long weekends to spend celebrating.  And summer celebrations are prime time for grilling outside or starting to enjoy garden produce; I love the food from this time of year.  People tend to eat lighter foods when it's hot outside, which also makes this a perfect time to find new Phase One recipes from other blogs.  This round-up has some lovely ideas for grilled foods or garden vegetables; hope you'll find at least one or two recipes here that might become a favorite on your table.  (You can use the label Low-Glycemic Recipe Round-Ups to see all the posts like this one.)

It's salad season, and my favorite Phase One Recipes for May 2013 were Leafy Green Salad with Roasted Chickpeas, Leftover Chicken Asian Chopped Salad, Barely Blanched Broccoli and Cauliflower Salad, and Pinto Bean Salad with Avocado, Tomatoes, Red Onion, and Cilantro.

It doesn't take more than a peek at the South Beach Diet Phase One Recipes Round-up for May to see that food bloggers have made the mental switch to summer eating.  There are lots and lots of salads, an abundance of foods cooked on the grill, plenty of fish, very few soups or stews, and recipe titles with summer ingredients like Tomatoes, Cucumbers, Basil, or Pesto.  Everyone loves summer don't they, (even people who haven't spent 30 years of their life teaching elementary school!)  I get so inspired by the fresh bright flavors that come with summer eating, and I think this recipes round-up has enough good ideas to keep you eating delicious food for weeks, whether or not you're doing Phase One.

My favorite Phase One Recipes from April 2013 were Lentil Taco Salad, Roasted Asparagus with Gremolata, Roasted Garbanzo and Vegetable Salad, and Spicy Broccoli Jicama Salad.

It's May 1, and the gardener inside me is fighting to get out.  Unfortunately my new house has serious gardening challenges (like higher elevation and critters) that will take me at least a year to work out before I'll have a garden that's even close to the garden I'm used to.   I will plant a few things in the small chicken-wire enclosed garden space the previous owners had, and I do have a few herbs growing in my window, but I may have to make more trips to the farmer's market, or even share a CSA share with someone to get my veggie fix this summer.

My favorite Phase One Recipes from March 2013 were Thai-Inspired Ground Turkey Larb Salad, Roasted Bell Peppers and Red Onions with Turkey Italian Sausage, Mediterranean Spinach Salad, and Spicy Sauteed Chickpeas with Ground Beef.

It's April, and I've been living in my new house for a week and one day, and I'm completely in love with the house.  It's a good thing, because after moving 25 years of accumulated stuff, I never want to move again!  During March, all that time spent moving meant a lot less time to spend cooking or looking for Phase One recipes, but somehow I still managed to find quite a few recipes to share for the Round-Up.  And the stress of moving meant way too much comfort food was consumed, so I'll be doing Phase One myself for a few weeks during April to try to get back on track!

My favorite Phase One Recipes from February 2013 include CrockPot (or stovetop) Black Bean Chili with Lime and Cilantro, Baked Eggs with Mushrooms and Parmesan, Vegetarian Greek Lentil Casserole with Bell Peppers and Feta, and Fattoush-Inspired Chopped Salad with Buttermilk-Tahini Dressing, Chickpeas, Sumac, and Pine Nuts.

Before I send you off to look at South Beach Diet Phase One low-glycemic recipes I posted during February or spotted on other food blogs, I have some pretty exciting news to share.  After saving my money for years and looking at houses for months, I am moving to a new house later this month!  I'll be moving back to the city where I grew up just north of Salt Lake, where I'll be much closer to family members, (including many, many cute little kids that I might get a chance to babysit now that I live closer and have a playroom.)  I love my new house, and promise to share a few kitchen photos once I get moved in.

Sorting through and packing up all the stuff I've accumulated in 25 years at my current house is going to be a rather daunting job (especially since my broken arm is still limiting what I can lift) and I'm guessing that the posting schedule here might be a little lighter than usual this month. But I'm grateful to the many family members and friends who have offered to help, and I should be somewhat settled into the new house by late March.

Let's all wave goodbye to November.  And since another month has ended, it's time for another round-up of South Beach Diet Phase One recipes I've posted during the month or found on other blogs.  Since it's the month with a holiday where overindulging in food is part of the tradition, you might think November would be slim pickings when it comes to South Beach Diet Phase One Recipes, but this round-up has surprisingly good assortment of dishes.  And just in time, since my normal December plan is to be ultra disciplined the first three weeks of the month (since I know the days from Christmas to New Year's will be pretty indulgent.)  For anyone else who's doing a little pre-holiday dieting, I hope these recipes will be useful.
