This Baked White Fish with Pine Nut, Parmesan, and Basil Pesto could be a special Phase One dinner.

(Let's finish out the Month of Daily Phase One recipes with this fish recipe from 2010 that produces results so spectacular that no one would possibly imagine it's diet food.  Serve this with a lovely salad of baby spinach and some type of roasted vegetable and it would be a perfect Phase One dinner for any special occasion.)

I love hanging out in the kitchen, and I don't mind spending time on projects like making homemade chicken stock, making slow roasted tomatoes, or roasting bell peppers, but I'm not the kind of cook who wants to spend hours on a fussy recipe. I especially love recipes that are easy to prepare but have interesting ingredients with lots of flavor, and this recipe for baked white fish with a crust made of chopped pine nuts, Parmesan, garlic, pesto, and mayo certainly fits that description. I made this with fillets of halibut, but you can use cod, tilapia, grouper, or any type of mild white fish. This is easy enough to make for dinner after work, but if you make it for dinner guests, they'll probably never guess how easy it was to throw together.

(Tomorrow's the last day of the Month of Daily Phase One recipes, and this is also count-down-to-the-Superbowl week, so I decided my sister-in-law Amy's Amazing White Chicken Chili was a perfect Phase One Recipe to spotlight.  I promise, whether you make this for Phase One, or for the Superbowl, you won't get any complaints.)

Superbowl Sunday is one of the biggest chili-eating days of the year, and if you haven't picked your chili recipe yet this white chicken chili from my sister-in-law Amy is one of the best chilis I've eaten for a long time. If you don't make this for the Superbowl be sure you try it some other time, because this is a chili recipe you don't want to miss out on. In fact, when you hear the story about how I came to have the recipe, you'll see this is a chili recipe I was meant to have!

Recipe for Vegan Heart of Palm and Avocado Salad with Lime, Green Onion, and Cilantro

The ingredients might be a bit of a splurge, but this salad is mind-blowingly good!

This amazing salad is what I'm recommending all of you should make for a Meatless Monday lunch tomorrow, and it's also a perfect choice for the Month of Daily Phase One recipes. Every now and then you come across a recipe that just knocks your socks off, and my nephew Jake and I went crazy over this simple salad with hearts of palm, avocado, lime, green onions, and cilantro.  In fact the recipe makes 4 side dish servings, but we finished all but a few spoonfuls of it right after we made it.  The recipe came from my friend Suebob, who messaged it to me on Facebook along with a note saying she got it from a friend at Weight Watchers.  Thanks Suebob; this is definitely something I'm going to be making over and over!

Kalyn's Perfect Recipe for Taco Salad

(Next up for our Month of Daily Phase One recipes is my favorite way of making taco salad, first posted in 2008.  This salad is something I always make for myself when I'm doing Phase One, and little containers of this taco meat and black bean mixture are something I always have in my freezer.  You'll need to use lean ground beef and low-fat cheese to make this diet friendly.  I also make my own Ranch Dressing with light mayo, which allows me to eat this more often!)
 
Do you love trying new foods, or do you have old favorites that you eat over and over again? If your answer was "Both," maybe you're suited for the life of a food blogger! If you're writing a food blog about recipes, you need to keep coming up with something new to try frequently (for the blog, that's what we tell ourselves.) On the other hand, even the most adventurous food blogging cook probably has things they make regularly.

CrockPot Recipe for Hungarian Pot Roast with Sour Cream and Paprika Gravy

(We're nearing the end of the Month of Daily Phase One recipes, and I'm trying to make sure I've shared as many of my long-time Phase One favorites as I can mix in with the new recipes.  This Crockpot Recipe for Hungarian Pot Roast with Sour Cream and Paprika Gravy is something I used to make on the weekend when I was teaching school, and then I'd take it for my lunch all week.  I'd never get tired of eating this delicious pot roast!)

A few weeks ago I made this Hungrian Style Pot Roast with onions, red peppers, and sour cream paprika gravy. I ate some and then made several little containers to take for lunches at school. Then I raved about how good it was at lunch every time I ate some. Since then, my co-workers have been more than patient about waiting for the recipe, so I'm glad I finally got around to posting it.

Chicken Breasts with Cilantro and Red Thai Curry Peanut Sauce

This is one of my favorite Phase One recipes with chicken!

(Next up for our Month of Daily Phase One recipes, this amazing and simple recipe with sauteed chicken breasts topped with a sauce flavored with cilantro, ginger, garlic, peanut butter, coconut milk, and red Thai curry paste.  This is one of my all-time favorite ways to cook chicken breasts, first posted in 2007.  The recipe has been needing new photos for a long time so it makes me very happy to be able to give it an update!)

When I featured Thai Kitchen Lite Coconut Milk for Kalyn's Kitchen Picks, along with my recipe for Thai Chicken Soup, I promised another great recipe using coconut milk, and I loved this chicken recipe with coconut milk in the sauce.  The recipe has a few key ingredients which are blended to make a creamy peanut/curry/ginger paste. When you heat the paste and mix with coconut milk and chopped cilantro, the result is a highly flavorful, fresh tasting sauce that really bumps up the flavor of whatever you serve it with.  The sauce was great on chicken, but I think you could also serve it on pork, fish, broccoli, or cauliflower. Recipe for Easy Pan-Fried Pork Tenderloin with Mustard Sauce

Pork Tenderloin is lean, inexpensive, and quick for a Phase One dinner!

How about a new ultra-easy pork recipe for our Month of Daily Phase One recipes?  Lately I'm loving pork tenderloins, a lean cut that's usually sold in packs of two with a total weight of about two pounds.  As long as you're careful not to overcook the meat, pork tenderloin is incredibly easy to cook well, and Jake and I both loved this pork tenderloin with mustard sauce.  If you have an instant-read meat thermometer, I'd pull it out of the drawer for this recipe.  The USDA now recommends pork be cooked to 145F, and if you take this off the heat when it reaches that temperature and let it rest for ten minutes, the pork will be juicy and tender.

Recipe for Canned Tuna and Tomato Salad with Sunflower Seeds

This salad is a great Phase One lunch with a lot of my favorite flavors!

Since we're working our way through a Month of Daily Phase One recipes, it seemed like a good time for me to update this favorite lunch salad of mine, which was lounging around in the recipe archives without a single photo since 2005.  I've made it plenty of times since then, even improving on the original recipe a bit, and finally got around to snapping a few pictures!  As I made this I thought about the name of the salad, realizing that when it comes out of a can I used to call it "tuna fish" but now I call it "canned tuna."  For this salad I use my favorite tuna packed in olive oil, Cherubs salad tomatoes from Costco, and dry-roasted sunflower seeds, and it's something I'd happily eat for lunch most any day.

(We're almost in the final week of the  Month of Daily Phase One recipes and I didn't want to miss this breakfast casserole from January 2010, which is one of my favorite breakfast casserole combinations.  It does have ingredients which some people might not have on hand, but trust me, this is worth putting a few items on your shopping list!)

I can tell there are a lot of you who are either getting started on the South Beach diet or going back to Phase One for a diet tune-up like I am, because over the weekend a lot of people were using the new Index of South Beach Diet Phase One Recipes. I'm thrilled people are finding it helpful, because I did work hard to get it ready for the new year. Whenever I'm back to Phase One, either a breakfast casserole like this or South Beach friendly Egg Muffins are my usual breakfasts. Either of those can be made on the weekend and kept in the fridge all week, ready to be heated in the microwave for an easy breakfast before work.

Recipe for Vegan Lentil Chili with Roasted Red Peppers, Olives, and Green Onion

This Vegan Lentil Chili has both brown and red lentils, and it's loaded with flavor.

I have to admit I am enjoying the challenge of coming up with a meatless recipe every Sunday so it's ready on the blog for Meatless Monday, even when it's a Month of Daily Phase One recipes, which makes finding those vegetarian recipes a bit more challenging.  Luckily dried beans and lentils are approved for phase one, and this Vegan Lentil Chili was so flavorful that I think it's a perfect Meatless Monday recipe idea.  I love all things lentil, and couldn't resist adding some red lentils along with the regular brown lentils this recipe started out with.  I also added roasted red peppers and sliced olives for a little more flavor, and used canned vegetable broth as the base of the chili. This was delicious as-is, but if you like tart flavors I think a generous squeeze of lime juice would really be good.

Easy Recipe for Baked Pesto Chicken (LowCarb, GlutenFree)

This Easy Baked Pesto Chicken is a tasty main dish for Phase One.

(I don't think I could go clear through the Month of Daily Phase One recipes without featuring this Easy Baked Pesto Chicken from 2010, which is without a doubt one of the most popular Phase One recipes on the blog.  It's delicious even with purchased pesto from the store, but if you make your own pesto and keep it in the freezer, that will make this dish even better!)

I stumbled on to this recipe for Baked Pesto Chicken when I was looking in The South Beach Diet Quick and Easy Cookbook for a recipe my friend Bonnie had recommended. At my house there's fresh basil on the counter, I'm freezing basil for winter, and I've now made two batches of Basil Pesto with Lemon, so it's not really surprising that a recipe using pesto would catch my eye. If you don't have any basil growing, you can certainly make this ultra-easy main dish with purchased basil pesto, which is what the recipe in the book called for. If you have more fresh basil, or more basil pesto left in your jar after you make this, look after the recipe for some other ideas using pesto.

Recipe for Quick Sriracha Beef Lettuce Wraps

This is the first time I've made lettuce wraps with beef, and they were a treat for Phase One.

How about another new recipe for lettuce wraps for our Month of Daily Phase One recipes?  You may have noticed I have quite a few recipes for lettuce wraps, and they're on the menu often at my house.  When I tried this new variation, I fell for these Quick Sriracha Beef Lettuce Wraps in a big way.  Only a few days after the original batch you see in these photos was gone, I was already making them again, partly because I bought two heads of iceberg lettuce, and all the other ingredients in this recipe are things I always have in the fridge or freezer.  There are a lot of flavors like fish sauce, lime, green onion, and cilantro going on here with the beef and Sriracha Sauce, and if you like Thai flavors I feel confident saying you're probably going to love this recipe as much as I did.  And for cilantro-haters, I would recommend just doubling the amount of green onions and I think this would still be very flavorful without the cilantro.

Recipe for Roasted Mushrooms with Garlic, Thyme, and Balsamic Vinegar

(We're still counting down on the Month of Daily Phase One recipes, and these wonderful roasted mushrooms that I first posted in 2009 would make a wonderful Phase One side dish that feels like a treat.  Even if you had to use dried thyme, I think these would still be really good.)

If I ever decided to make a list of "foods I'd never get tired of," there's no doubt that mushrooms would be on that list. This interesting mushroom recipe, where they're partly roasted and then tossed with garlic, fresh thyme, and balsamic vinegar, comes from Vegetables Every Day by Jack Bishop, one of my all-time favorite cookbooks. I think mushrooms are good no matter how you cook them, but roasting concentrates the mushroom flavor in a way that makes these mushrooms especially good. My grill is still packed away due to house renovations, but if I was you, I'd roast the mushrooms on the grill, then serve them over a steak or some grilled pork chops. If you're not in a grilled meat kind of mood, the mushrooms would make a great side dish no matter what you're serving.

Recipe for Sausage and Kale Mock Lasagna Casserole

This Sausage and Kale Mock Lasagna is so delicious, you won't even miss the noodles!

As we're making our way through the Month of Daily Phase One recipes, I've been giving thought to Phase One recipe ideas beyond the usual grilled-meat-and-salad meals that many people rely on when they're watching their weight.  Not that I don't enjoy a delicious piece of meat or fish and a tasty green salad, but after a few days of that I start to crave something that's more in the "comfort food" category.  I had comfort food in mind when I came up with the idea for Ham and Casserole au Gratin, and this Sausage and Kale Mock Lasagna is another comforting casserole that's so loaded with flavor that you won't even miss the lasagna noodles.  When I made this I ate it for lunch and dinner two days in a row, and if I hadn't put some in the freezer, I might have had it the next day as well!  If you're not a fan of kale yet, other sturdy greens like chard or collards would probably work, but I don't think softer greens like spinach would hold up that well in this.

When my friend Bonnie told me she had made this recipe and liked it, I immediately realized I wanted to make it again just so I could take better photos! Bonnie was kind enough to say that she didn't think the old photos were that bad, but trust me, these updated photos give you a much better idea of what a tasty recipe this is! This pot roast is just the thing to cook on low all day in the slow cooker while you're at work, and dinner will be ready when you get home.

Recipe for Vegetarian Mushroom Stew with Red Bell Pepper, Onion, and Paprika

This Mushroom Stew is a great vegetarian Phase One recipe for Meatless Monday.

We're nearly half-way through the Month of Daily Phase One recipes!  I know Phase One can be challenging for vegetarians, so I'm feeling happy about this delicious Vegetarian Mushroom Stew with Red Bell Pepper, Onion, and Paprika.  I'm not sure if I should be calling it a stew, because it's not really stewed.  Actually all the veggies are sauteed separately at relatively high heat, and then some paprika and sour cream is stirred in at the end, but the finished dish feels like a stew to me, so that's the name I'm going with.  This recipe can also be served over noodles or rice if you're not eating it for Phase One, in which case I would cut the red peppers and onions a bit smaller.

Crockpot Recipe for Sausage, Peppers, and Cannellini Bean Stew with Parmesan

Make this Crockpot Sausage, Peppers, and Cannellini Bean Stew on the weekend and eat it all week!

(This tasty crockpot stew from 2010 is a great candidate for the Month of Daily Phase One recipes.  I love dishes like this that you can keep in the fridge and eat for lunch or dinner all through the week.  Dried beans are limited for Phase One, but since this stew has a lot of meat and vegetables besides the beans you can have a regular serving.)

I'm one of those people who can eat soup or stew all the time and never get tired of it, and sometimes my best recipes are inspired by things in the fridge that need to get used. In this case, it was a red pepper and a green pepper hanging out in the crisper that provided the motivation for this crockpot stew with pepper, beans, and hot turkey Italian sausage. I ate this with a generous sprinkling of Parmesan cheese on a day when it was too cold to want to go anywhere, and it was a perfect lunch for a cold winter day.

(Here's the latest featured recipe for our Month of Daily Phase One recipes.  This Red Kale and Cheese Omelet for Two that I first posted in 2008 is such a great Phase One option.  If you can't find the Red Russian Kale, just make this with another type of kale.)

This omelet with kale, onion, and cheese is something I first made in August when my garden was bursting with Red Russian Kale, but this idea of using greens in an omelet is still a good one, even if you have to buy the kale. This is really a simpler, quicker variation of the Red Russian Kale and Red Onion Savory Breakfast Squares I posted earlier, but if you're cooking for one or two you might like this recipe even better. Everyone needs to eat more greens, and this is a tasty way to get some into your diet.

Recipe for Italian Sausage and Bean Soup with Chard

This Phase One Italian Sausage and Bean Soup with Chard is simple and delicious.

(Here's a great Phase One soup recipe to add to our Month of Daily Phase One recipes.  I made this during the Christmas holidays and took some new photos to show the steps of making the soup more clearly, and the soup was a hit at the Denny Family Christmas Party.)

Long before I ever started thinking about eating the South Beach Diet way, I was a big fan of turkey Italian Sausage, something I use in dishes like Italian Sausage and Zucchini Soup, Sausage and Basil Marinara Sauce with Fresh Tomatoes, and Spicy Cherry Tomato Sauce for Pasta. This soup also has Italian Sausage, but it's very difference than those recipes, since there are no tomatoes. The combination of sausage, beans, and chard was inspired by one I saw in a cookbook somewhere, but I only jotted down "sausage, beans, and escarole, soup" so I can't tell you where I found it.

(Today's offering for our Month of Daily Phase One recipes is this Spicy Mexican Slaw with Lime and Cilantro that's been one of my go-to Phase One side dishes ever since I first tried it.  This slaw has been a big hit with everyone I've made it for, except people who don't like cilantro of course.  If you're not a cilantro fan, I'd still make the slaw and just leave it out.)

Don't you love it when you stumble on a recipe with such a perfect combination of ingredients that after one bite you know you'll be making it over and over again? That's just how I felt when I tasted this fabulous cabbage salad. I have in fact made it two more times in less than two weeks, and completely loved it each time. As soon as I read the recipe in Fine Cooking Annual 2008, with an ingredient list that included cabbage, cilantro, mayo, and lime I knew I'd be making it soon. I did adapt the recipe a little, and since I like my cabbage salads to stay crunchy, I completely ignored the recipe instructions to salt and drain the cabbage.

Recipe for Ham and Cauliflower Casserole au Gratin

This Ham and Cauliflower Casserole Au Gratin is not too photogenic, but it was a treat for Phase One!

We're continuing the Month of Daily Phase One recipes, and at my house it was starting to feel like time for a Phase One recipe that fit in the category of comfort food.  There was ham and cauliflower in the fridge, and I was definitely thinking about Twice Baked Cauliflower when I got the idea for this casserole with ham and cauliflower in a creamy sauce with cheese.  The good news is that while Twice Baked Cauliflower is definitely a once-in-a-while treat, this recipe uses fat-free Greek yogurt for most of the creaminess, with just a tiny bit of light cream cheese and a few tablespoons of Parmesan.  It also has lean ham instead of the bacon and a very moderate amount of low-fat cheese, making this a recipe you can enjoy more often.  It may not be the most photogenic comfort food dish in the world, but it was clean-your-plate delicious and is definitely something that will become a Phase One stand-by at my house.

This recipe for halibut baked with a topping of sour cream, Parmesan cheese, garlic, dill, and green onions has six main ingredients besides salt and pepper, so it barely misses the cut for my category of Easy South Beach Recipes with Five Ingredients or Less, but in spite of that this must be about the easiest way in the world to cook fish. I splurged on halibut, since my Costco started carrying it again, but you could make this with any type of mild white fish.

Chickpea (Garbanzo Bean) Soup Recipe with Spinach, Tomatoes, and Basil

This Chickpea Soup with Spinach, Tomatoes, and Basil is a meatless Phase One recipe.

I'm featuring a Month of Daily Phase One recipes during January, and since it's Sunday night, I'm sharing this favorite meatless chickpea soup, perfect for Phase One, or for anyone who's looking for ideas for Meatless Monday tomorrow.  This is one of the soups I made during the holidays for my annual soup party, only when it came time to stir in the basil I found I didn't have any of that wonderful frozen basil that usually lasts me through the winter.  What I did have in my freezer was plenty of basil pesto, so I just stirred some of that into the soup instead.   It was such a hit that I'm going to add that option to the recipe along with the new photo you see above.  I know phase one main dishes can be challenging for vegetarians, but this soup is a meatless recipe that won't leave you feeling deprived!

Recipe for Tuna Salad Lettuce Wraps with Capers and Tomatoes

I think these Tuna Salad Lettuce Wraps are the perfect Phase One lunch!

Before we get too far into our Month of Daily Phase One recipes I thought it was time to share a recipe for lunch.  Occasionally people write to me and request ideas for brown bag lunches, and I have to confess I have really not been that helpful.  Lunch hasn't been an issue for me; when I worked, I always had access to a teacher's lounge with fridge and microwave, and whatever food was leftover from something I cooked for the blog was lunch.  But if I've neglected lunch as a category in the past, hopefully I can redeem myself a little with these crunchy and delicious Tuna Salad Lettuce Wraps with Capers and Tomatoes.  I happily ate these for lunch three days in a row, and the fourth day when I had no more lettuce pieces big enough to wrap around the last bit of the tuna, I ate it over some chopped lettuce as a salad.  If you like tuna at all, and you have a fridge to put your lunch in at work, this just might become your new favorite brown bag lunch option.

Here's a meatless Phase One Breakfast casserole that's one of my favorites!

(We're doing a Month of Daily Phase One recipes during January, and today I'm featuring this Roasted Green Bell Pepper and Roasted Tomato Breakfast Casserole which is one of my favorites.)

This is another one of those recipes that happened when I was just making something to eat, and then it turned out so well I decided to make it again and take photos for the blog. It was inspired by one of those big plastic containers of cherry tomatoes from Costco. It seems I can rarely manage to use all the tomatoes before they start to shrivel, and when I was thinking about what to do with slightly-shriveled cherry tomatoes I hit on the idea of roasting them for a breakfast casserole. There was a green bell pepper in the fridge that was begging to go into this, and adding some dried oregano and feta cheese gave it a bit of Greek flavor. I've made a lot of this type of breakfast casserole, and even written a how-to post on making South Beach friendly breakfast casseroles, and I think this combination is one of the best ones I've come up with (so far!)

My favorite Antipasto Chopped Salad is on the menu today for our Month of Daily Phase One recipes; doesn't that look good?   This favorite salad of mine is like the kind you might order in an Italian restaurant, loaded with tasty ingredients like olives, hearts of palm, turkey pepperoni, marinated mushrooms, peperoncini, slices of mozzarella and capers.  Some people might look at all that's going on in this salad and decide to skip it because it will take too long to chop up all those antipasto ingredients.  But truthfully, interesting salads like this can be easy to pull together once you master a few tricks for satisfying salads.

Maybe this only happens at my Costco, but have you noticed how those rotisserie chickens jump into your basket when you're out shopping with no dinner plans? I never have rotisserie chicken on my list, but I often come home with one. This chicken dish is perfect to make with leftover chicken, and it's wonderfully flavorful with ginger, jalapenos, and chunky peanut butter adding interest. It's also simple to make, and you can save the chicken carcass, bones, and skin (if you manage not to eat it) to make homemade chicken stock. I can tell the word is getting out about the new Index of South Beach Diet Phase One Recipes from Kalyn's Kitchen, and yes indeed, this is another Phase One recipe to add to the list.

Slow Cooker Recipe for Spicy Ground Beef and Bean Soup with Cabbage and Spinach

This soup can cook in the CrockPot while you're at work.

We're doing a Month of Daily Phase One recipes during January, and here's a new Phase One soup recipe you can put in the slow cooker and let cook all day while you're at work.  When you get home you'll have to add the cabbage and spinach and cook for about another hour, but you can put your feet up and read the paper while the soup finishes.   And if chop the cabbage and spinach the night before, your work will be done when you get home from work!

These Turkey Lettuce Wrap Tacos are a great Phase One dinner!

(We're doing a Month of Daily Phase One recipes for January 2012, and for anyone doing phase one this month, these Turkey Lettuce Wrap Tacos from 2009 are a dinner that won't leave you feeling deprived.  You can use regular tortillas to make tacos for family members who aren't doing phase one.)

I'm on Twitter, along with a lot of other food bloggers, but this is the first time I've ever found a recipe there! Actually I'd been thinking about lettuce wrap tacos ever since I posted the recipe for the Spicy Turkey Lettuce Cups, but when I tried my usual Taco Salad meat/bean mixture in lettuce, it was just okay (I missed the Ranch dressing!) Then on Twitter I saw Marisa from Food in Jars talking about this turkey taco recipe, and when I checked the recipe, I knew it was going to be perfect. I never manage to make a recipe exactly like it's written, so I added some green onions (and a lot more cilantro) to the turkey mixture, but believe me, these turkey tacos are a complete keeper, something you'll make over and over. What makes this story especially fun is that I recently met Marisa at SXSW, and had a great time chatting with her in person after getting to know her on online. (Hi Marisa!)

Recipe for Egg Muffins with Ham, Cheese, and Green Bell Pepper

Egg "Muffins" in the fridge are a great way to start out the week!

I was thinking about what would be a good way to start out our Month of Daily Phase One Recipes and  realized that the first thing I usually do when I start Phase One is make a batch of egg muffins to have in the fridge.  These little baked mini-frittatas are easy to grab for a quick Phase One breakfast, and they make a great snack too.  I've been making egg "muffins" for many years now and my preferences have changed a bit.  In my post on Egg Muffins, Revisited Again I show them being made in silicone muffin pans, but now I always use Individual Silicone Baking Cups like you see in these photos.  I haven't posted a lot of different egg muffins recipes, since the variety of things you can use in them is pretty much endless, but for people who are new to this idea I thought it might be fun to share this version, which is probably my favorite out of all the ones I've made through the years.

South Beach Diet Phase One Recipes Round-up for December 2011 (Low-Glycemic Recipes)

This easy Roasted Cauliflower with Red Bell Pepper, Green Olives, and Pine Nuts was Kalyn's favorite Phase One Recipe from December 2011.

We're kicking off 2012 with A Month of Daily Phase One Recipes on Kalyn's Kitchen!   Of course I start off every month of the year with another post to add to my SBD Phase One Monthly Recipe Round-Ups, so the timing is perfect.  These recipe are the Phase One recipes I've posted on my blog or found on other food blogs during the month.  I'm sure it won't surprise you to hear that December is not the easiest time to find Phase One recipes on food blogs, but I did manage to find some!  Phase One vegetarian dishes are especially hard to find, but there's even a very tasty looking curry dish with chickpeas and spinach which is going to have to be my suggestion for a Meatless Monday recipe for this week.
